Welcome to the second Edible Eat of the Week! A recurring series, Edible Eat of the Week celebrates the bounty of Long Island by showcasing special, seasonal eats and the people who make them.

The Eat: A strawberry mascarpone swirl doughnut. Need we say more?

The Place: North Fork Doughnut Company in Mattituck.

The Story: Billed as North Fork Doughnut Company’s tribute to summer strawberry season, this doughnut brings together three of our all-time favorite things: local strawberries, freshly made doughnuts and creamy mascarpone.

A lot has happened since North Fork Doughnut Company opened its doors in June 2018. The shop—known affectionately as NoFoDoCO by its many fans—quickly became a destination, and a new classic on the beloved North Fork dessert trail that keeps us heading east (and thanking God for elastic waistbands). And that’s not all; just last month, NoFoDoCo owners Jimmy Lyons and Kelly Briguccia announced that they’re opening a second location in Bay Shore, slated to open this fall.

“We chose Bay Shore for our second shop because it seems like a neighborhood that embodies everything we love about the North Fork,” said Lyons. “It’s up-and-coming, there are tons of amazing small businesses and we feel that we can be a part of something really special in Bay Shore. There’s a movement happening over there and we want to contribute what we can.”

Head out to Mattituck this week for a taste of Bay Shore’s future. The following eight flavors will definitely be available: glaze, cinnamon sugar, caramel coffee cake, cereal, Boston cream, black raspberry jelly, apple fritters, and the “OGs” (chocolate, vanilla, and strawberry with rainbow sprinkles). To confirm what special flavors—like Strawberry Mascarpone Swirl—are available, check out NoFoDo’s “flavor forecast” here.

Pro Tip(s): Don’t order just one. Trust us.
