Summer’s Not Over Yet: 8 Watermelon Recipes To Eat While You Still Can

This morning, I couldn’t believe how cold it was downstairs when I went into the kitchen to make myself a hot cup of coffee. The windows were open and the house smelled of freshly cut grass and roses. It was a beautiful day that smelled of late summer, but the cold wind blowing through the windows contradicted it and said, “Hello, Fall!”

But, it’s not fall. It’s not even close yet. It’s just the beginning of September and we still have weeks and weeks of warm weather left for us to enjoy. And, I have no desire to cut the summer short. I’m still looking forward to spending many more days eating homemade ice cream, making smores, and grilling out on the back porch.

With this in mind, I’ve gathered up these 8 incredibly fun Watermelon recipes for us to drool over. I’m planning to make and eat every single one of them before I even think about scarfing down a slice of freshly baked pumpkin bread or slurping down a mug of hot cider.

1. Watermelon Slices With Cream Cheese Icing

This quick and easy watermelon recipe from Wholesome Yum is made with fresh berries and a cream cheese icing. Amazingly, it’s sugar-free, low carb, and gluten-free too. Is that even possible? Ready in just 10 minutes, it’s a perfectly healthy way to enjoy summer’s last hurrah!

2. Watermelon Gazpacho with Lime

I’ve been tempted to make watermelon gazpacho for quite some time now, but I still haven’t done it yet. Simply Fresh Dinners serves up a recipe that only involves chopping and chilling. No cooking! The finished dish is hot, spicy, salty, savory and sweet. This may just be a game changer for me.

3. Watermelon Feta Salad

This salad from We Know Stuff is my most favorite way to enjoy watermelon all summer long. The salty-sweet combination of watermelon, oranges, red onions, feta, and salt may sound weird at first, but it’s just divine. My husband and I can usually be found fighting over the last bits of this salad on days when it’s just too hot and humid to cook.

4. Watermelon Margarita Popsicles

Salt and Lavender reminds us that popsicles aren’t just for kids with this mouthwatering recipe for adults-only popsicles. Start your weekend off right with these naturally sweet and perfectly boozy 4-ingredients—watermelon, silver tequila, lime juice, and salt—popsicles! The natural color gradient earns major points in the creativity department too!

5. Watermelon Pizza

I typically like my pizza with sauce, cheese, and an ice cold beer—but A Side of Sweet shows us a whole new way to enjoy America’s favorite dinner! Healthy and gorgeous to look at, this watermelon pizza is a great way to impress everyone you know. Simply top watermelon slices with Greek yogurt and an assortment of fruit—and you’re done.

6. Watermelon Chicken Salad with Pine Nuts

Salty and sweet, this watermelon chicken salad from Home and Plate is a perfect way to enjoy a light lunch that’s packed full of protein and vitamin C. Watermelon is always delicious on its own, but when nestled on a bed of freshly picked spring greens and topped with juicy grilled chicken and crunchy pine nuts, it’s even better.

7. Mexican Watermelon Water (Agua de Sandia)

I had never even heard of Agua de Sandia until I stumbled across this recipe from Isabel Eats. This simple 3-ingredient recipe is a light and refreshing mocktail that’s low in calories making it perfect for warm, sunny days. It could also be easily converted into an adults-only cocktail with the addition of some vodka or tequila!

8. Watermelon Infused Vodka

Speaking of cocktails…why haven’t I thought about making an infused vodka with the last of summer’s watermelon crops? Dishes Delish shows us just how easy it is to make our own. As if that wasn’t good enough, she also whips up a Watermelon Cosmo recipe that’s so delicious, it’ll become the star of your cocktail rotation from now on!
