Whenever I think about a tasty and satisfying “on-the-go” snack, a granola bar is a tough choice to beat. They flaunt their versatility in many ways and can be enjoyed as a nourishing after-school snack for children, a nutritious breakfast for busy adults, and even a wholesome post-workout staple for athletes. Whether you like yours crunchy with toasted oats and organic honey or chewy with shredded coconut and chocolate chips–there’s a granola bar recipe out there for you.
This healthy, portable snack has always been a popular one for my active family, and I find myself making them as often as I can. I love that I can easily control the ingredients that I put into them and that they are remarkably easy to make. Most granola bar recipes like this one require nothing more than a wooden spoon, a few simple ingredients, and a warm oven.
To create a hearty and wholesome base layer, I start off with old fashioned rolled oats and locally harvested honey. From there, you can get as creative as you want to tailoring the ingredients to suit your personal preferences. My family likes their granola bars sweet and crunchy, so I add in semi-sweet chocolate chips, dried cranberries, and toasted almonds.

HOMEMADE OAT & HONEY GRANOLA BARS
Combine your family’s favorite ingredients to create a granola bar that everyone can enjoy!
- 1 ½ cups old-fashioned oats
- ½ cup chopped almonds
- ½ cup dried cranberries
- ½ cup finely shredded unsweetened coconut
- ½ cup honey
- ¼ cup creamy peanut butter
- 1 ½ teaspoons pure vanilla extract
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips
PREHEAT: Set your oven to 350 degrees F.
PREPARE: Line an 8 by 12-inch jelly roll pan with parchment paper.
TOAST: Evenly spread the rolled oats and roughly chopped almonds on a sheet pan. Bake for 10 minutes until lightly browned. Stir ingredients after the first five minutes. Transfer to a large mixing bowl after baking. Add in the cranberries and shredded coconut.
MELT: Add honey, peanut butter, vanilla extract and salt to a small saucepan. Over low heat, warm the ingredients and stir until smooth. Pour over the toasted oats and shredded coconut. Add in the chocolate chips last. Mix until incorporated.
BAKE: Spread the mixture into the parchment lined jelly roll pan. Gently press the mixture into an even layer in the pan. Bake for 8-10 minutes until golden brown. Cut the bars while still warm in the pan and allow to cool completely. Once they have cooled, you can easily break them apart into even bars.
