A December Full of Recipes: Holiday Energy Slaw ~ Lia Fallon

Leave it to Chef Lia Fallon to share a recipe that is just what we need, exactly when we need it: Holiday Energy Slaw. One of Long Island’s most acclaimed chefs, Lia imparts her culinary expertise and sensibility to a dish that is sure to give your calorically oppressed body a kick start into 2015.

Holiday Energy Slaw
Serves 4 healthy portions

Dressing
2 tablespoons sesame oil
6 tablespoons olive oil
Zest of 2 blood oranges
2 tablespoons lime juice
2 tablespoons mirin
2 tablespoons rice wine vinegar
4 tablespoons chopped cilantro leaves
2 teaspoons red pepper flakes
4 teaspoons kosher salt
2 tablespoon agave nectar

Slaw
2 cups shredded red cabbage
2 red peppers, julienned
2 blood oranges, segmented
2 cups spinach, chiffonade
1 cup grated butternut squash
1 cup shaved fennel
1/2 cup roasted and salted pepita seeds

Garnish
Cegetable oil
Mung bean noodles

Dressing
Combine olive and sesame oil; set aside. Add all remaining ingredients in a blender, mix on medium speed till combined. Stream in reserved oil until vinaigrette is formed.

Slaw
Combined all ingredients in a large bowl. Add dressing and toss until coated.

Garnish
Heat oil in a pot to 350º. Add mung bean noodles and fry until crisp. Remove crispy noodles and drain on papper towels. Top slaw with crispy noodles.
