Long Island, we could say, is pretty much the oyster capital of the world. Pretty much. And as we know new oyster farms and farmers are sprouting everywhere. The newest is Lucky 13, and favorite and one of the greatest is Blue Island. Out east we have Edible East End contributor Michael Osinski‘s Widow’s Hole and Pipes Cove, which is where we met up with Capt. Dave Berson on a beautiful summer day so he could school us on how to open oysters. Everyone “knows” how to open an oyster, but few are actually taken through a technique step by step by such a colorful character. We just had to share.
