Having just undergone a major renovation, the Polo Lounge and Steakhouse now boasts one of the most innovative cocktail lists on Long Island, created especially for them by famed cocktail creator Frank Caiafa of The Waldorf Astoria’s landmark bar, Peacock Alley.
Now at the helm is Orion Berge, a master mixologist who will be responsible for creating additional seasonal drinks like the Belle Epoque, or, quite simply, springtime in a martini glass. Made with cognac, Chartreuse, and raspberry preserves, finished with a twist of lemon peel, it’s intensely herbal with strong citrus notes, balanced with a just-sweet-enough hint of raspberry.
The name itself evokes images of a post-Impressionist Golden Age of French art, literature and fashion, and the cocktail does not disappoint. Made with one of the oldest and most mysterious liqueurs available today (Chartreuse, which was created as the “Elixir of a Long Life” and whose recipe is closely guarded by monks who have taken a vow of silence to protect it) the Belle Epoque is a sophisticated sipper that will make you feel as though you walked right into the Moulin Rouge circa 1899.
Enjoy it while sitting at the sparkly granite bar in the chic Polo Lounge, or take a stroll out to the newly renovated Patio Bar, where just the right amount of balmy night air and cognac will make you feel spring-feverish, indeed.
1 ½ oz Cognac
½ oz green Chartreuse
¼ oz fresh lime juice
1 ¼ oz raspberry preserves
Shaken, strained and served, straight up in a martini glass, garnished with a lemon peel.
