Recipe: Eggs Benedict Mac & Cheese

For brunch, it doesn’t get much better than this.

This recipe combines two of our favorite things: Egg Benedict and Mac & Cheese. Watch the video above to see how it’s done, or follow along with the recipe below to make it at home.

Ingredients:

For the poached egg:

  • 1 large egg

For the Hollandaise Sauce:

  • 1 stick (8 tablespoons) unsalted butter
  • 2 large eggs
  • 3 teaspoons lemon juice
  • 4 teaspoons water
  • salt, to taste
  • pepper, to taste

For the Mac & Cheese:

  • 3/4 cup uncooked elbow macaroni
  • 1 1/2 cup water
  • 1/2 cup evaporated milk
  • 2/3 mild cheddar cheese

For Putting it Together:

  • bun (potato roll, brioche bun or muffin)
  • 3 slices of bacon, cooked and diced
  • pepper
  • smoked paprika
